CARAMEL SLICE

It's a real highlight for us to hear about all the wonderful ways that you have used Funch to enhance your healthy snacking repertoire. This amazing looking Caramel Slice is the sole creation of the very fun, fit and creative Isabella via www.instagram.com/funfreshandhealthy Take a look at her instagram feed for some great food inspiration.
Base
- 1 packet of Funch Protein Power Ball Mixture, made with 2 tbsp melted Coconut Oil, 1/2 cup water + 1 tbsp Rice Malt Syrup.
Packed into a backing tray and baked at 180 degrees Celsius for 25 mins. Put in the freezer to cool completely while you make the caramel.
This makes it a yummy chocolatey 'cookie' base.
Caramel
- 1/2 cup + 1tbsp rice malt syrup
- 1/2 cup tahini
- 2tbsp coconut oil (melted)
- 1tbsp water
In a bowl mix all the ingredients together until really creamy and smooth. Pour over the cooled base and put into the freezer to firm up a little.
Chocolate
- 1/3 cup coconut oil (melted)
- 1/3 cup cacao
- 1/3 Naiva Natural Sweetener 'Icing Sugar' (Alternatively use Rice Malt or Maple Syrup)
Whisk together then pour over the slice and put back into the freezer to harden up.
Once hard take you can slice it up. Heat your knife in a jug of hot water (then dry) and slice through - this helps not break the chocolate so much.
NOTE: the caramel is super gooey and I'm still working on perfecting it but it still tastes delicious and is super messy to eat.
Store in the freezer or fridge.
